Grandma Olivia’s Creamed Corn
The recipe I am about to share with you is easy, healthy, and delicious…but most of all, this recipe is a very personal one. It is one my late grandmother gave me, along with the corn cutter.
The ingredients are simple- CORN
The corn cutter my grandmother gave me is something I have never seen in any store, I am not exactly sure where she got it, but it works perfectly for creaming ears of corn.
Over a large bowl in the sink, you simply run the ears of corn back and forth tto cut the kernels off the cob as well as effectively "milk" the corn.
It takes a lot of ears of corn to make 4 servings of creamed corn, but it is worth it!
After you have creamed the corn off the cob, pour it in a large pot and warm it up over medium heat, stirring often for approx. 10-15 minutes.
We all have sensory associations that instantly transport you to a time or place, maybe it's a fragrance or a photo. Nothing connects me more to my grandmother than the taste of creamed corn…I don't make it often, but everytime I do, I think of her and her country kitchen and a smile comes to my face.
